The dehydrator is roaring quietly away in the next room with 10 pounds of apples shrivelling up inside. Hmmm. That doesn't sound as appetizing as it might, does it. For what it's worth, I like dried apples, and this variety, a sweet crisp green apple that reminds me a bit of golden delicious before they turn mushy, will make particularly nice dried apples.

I went up to Carson Newman College yesterday to have lunch with my husband, and stopped off afterward in the library to read Science News and Science. So much is happening in science--the Science Daily web site at http://www.sciencedaily.com/news/summaries.htm has a new set of articles every day for goodness sake. But it's much faster for me to read off paper than to have to keep waiting for html pages to load.

The leaves are definitely turning here in New Market. Some of them have beautiful subtle dapples of red and orange and gold. Unfortuntately from a distance they blend into this odd brick red that isn't nearly as nice. I saw the hairy woodpecker again, this time trying to stuff something into a crack in a tree trunk not ten feet from my window. I wonder if she'll be around all winter.

My dried apples haven't made it as far as a pie, yet. They keep disappearing right out of the plastic bag. I had one batch that I dried "too long"; they came out more like apple chips, and Kip and I had scarfed them down within three days. Such an intriguing texture!

To tell you the truth, I've never made a pie in my life, and I'm a little intimidated by them anyway.

Tell the farmer he's supposed to dry the *best* fruit, not the worst, and things will go a little better ;-)
